Violation of Code: [511-6-1.05(6)(l)] Temperature gauge for final rise at warewashing machine varied between 127-165F over the course of several trays sent through the machine throughout different times during the inspection. In mechanical warewashing machine operation, the temperature of the fresh hot water sanitizing rinse as it enters the manifold may not be less than 180F. 3 compartment sink to be used for sanitizing until machine is repaired. Repeat Violation. 4-2B Violation of Code: [511-6-1.05(6)(m)] PSI gauge reads 53PSI during final hot sanitizing rinse cycle at warewashing machine. The flow pressure of the fresh hot water sanitizing rinse in a warewashing machine, as measured in the water line immediately downstream or upstream from the fresh hot water sanitizing control valve, shall be within the range specified on the machine manufacturer’s data plate (15-25PSI). Flow pressure to be evaluated/repaired at the time of making evaluation/repair to the hot sanitizing rinse temperature. New Violation. 15B Violation of Code: [511-6-1.05(3)(h),(i)] No min/max thermometer or thermal tape available to measure utensil surface at warewashing machine. In hot water mechanical warewashing operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the utensil surface temperature. New Violation.
