Violation of Code: [511-6-1.03(2)(a)-(l)(n)(o)] PIC failed in his duties to effectively monitor: hot holding, cold holding, and cooling of TCS foods; covering of stored foods; and sanitizing frequency of food contact surfaces. Retraining of the PIC is recommended to enable him to better fulfill his duties to educate and train food staff and practice effective Active Managerial Control of foodborne illness risk factors. PIC was educated on all these items during the inspection. Repeat Violation. 2-2D Violation of Code: [511-6-1.06(2)(o)] Observed utensils stored in handsink at cookline. Sinks must be maintained accessible to promote proper handwashing practices and dedicated for the purpose of washing hands only. COS- Utensils removed from sink and placed at dirty staging area of 3 compartment sink. Corrected On-Site. Repeat Violation. 4-2A Violation of Code: [511-6-1.04(4)(c)1(iv)] Observed plastic tubs of chips stored uncovered on bottom shelf of steamtable. Foods must be properly covered when stored to prevent possible contamination. COS- PIC had employee place lids on chip containers. Corrected On-Site. Repeat Violation. 4-2B Violation of Code: [511-6-1.05(7)(b)] Observed pink colored slime debris and food residue along interior baffle of ice machine. Food contact surfaces of equipment must be cleaned and sanitized at a frequency to prevent accumulations. COS- PIC cleaned baffle with a sanitizing cloth during inspection. Corrected On-Site. Repeat Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] Observed pan of salsa stored for use on prep table at 62F where PIC explained salsa should be stored in cooler instead. TCS foods must maintain 41F or less for cold holding. COS- PIC voluntarily discarded salsa. Corrected On-Site. Repeat Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] Observed horchata and strawberry water cold held between 57-59F at beverage fountain. Upon investigation, PIC determined the compressor for the fountain was accidently turned off when a beverage was switched out on the fountain around 10am today. TCS foods must maintain 41F or less for cold holding. COS- PIC voluntarily discarded foods and turned on compressor for drink fountain. Corrected On-Site. Repeat Violation. 6-1B Violation of Code: [511-6-1.04(6)(f)] Observed bag of rice hot held in plastic bag on steamtable at 107-116F. TCS foods must maintain 135F or more for hot holding. COS- PIC voluntarily discarded rice. Corrected On-Site. Repeat Violation. 6-1C Violation of Code: [511-6-1.04(6)(d)] Observed covered 6"pan of meat and vegetable soup cooling on prep table at 93-96F where PIC reported soup was prepared around 1pm (3 hours ago). TCS foods must cool from 135F to 41F within 6 hours where the cooling process is rapid enough so that the food reaches 70F within the first 2 hours of the 6 hour cooling timeframe.
