Violation of Code: [511-6-1.05(10)(e)1,2,4] Observed food storage trays stacked before completely dry. Clean equipment and utensils shall be stored in a self-draining position that allows air drying. COS: The trays were unstacked and allowed to air-dry. Corrected On-Site. New Violation. 15C Violation of Code: [511-6-1.05(7)(a)2,3] Observed rack in walk-in cooler used to hold eggs with an accumulation of mildew. Non-food contact surfaces shall be clean to sight and touch. COS: Employee washed, rinsed, and sanitized rack in 3 compartment sink and placed it back in walk-in cooler. Corrected On-Site. New Violation.
