Violation of Code: [511-6-1.05(6)(n)] No sanitizer registering in wiping cloth buckets. Chlorine sanitizer buckets must be maintained at a concentration of 50-100 PPM to achieve effectiveness. COS: PIC poured a cap full of bleach into solution. Corrected On-Site. New Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] Observed sliced tomatoes that had been sitting next to the 3-compartment sink in a container at 64F. PIC stated tomatoes had just been sliced 20 minutes ago. All TCS food should be stored under some sort of time/temperature control to prevent the growth of bacteria. COS: Sliced tomatoes were placed into the walk-in cooler to cool down to 41F. Corrected On-Site. Repeat Violation. 14A Violation of Code: [511-6-1.04(4)(k)] Scoop for raw meats left inside of grill cooler drawer between uses where the handle contacts the meat. Ice scoop stored inside of ice cooler where the handle contacts ice. To minimize risk, and prevent cross contamination, all handles of scoops must be stored not in contact with the foods that are used. COS: Discussed raw meat scoop being moved to separate cooler drawer. In the ice cooler, scoop was re-positioned above ice. Corrected On-Site. Repeat Violation.
