COS: PIC utilizing 4th compartment nearest wash compartment of 4-compartment sink for handwashing until handsink can be prepared. Corrected On-Site. New Violation. 6-2 Violation of Code: [511-6-1.04(6)(h)] Observed cooked potatoes in 2-door standing cooler with date mark of 2/3/19. TCS food prepared in-house must be disposed of after 7 days with day of preparation counting as day 1. COS: PIC voluntarily discarded of item. Corrected On-Site. New Violation. 6-2 Violation of Code: [511-6-1.04(6)(g)] Observed sliced watermelon stored in the 2-door standing cooler without appropriate date label.
