2-2D Violation of Code: [511-6-1.06(2)(c)] Observed kimbro stored on top of handsink blocking employees from washing their hands. Handsinks must remain accessible at all times. Handsinks must be only used for hand washing. COS: Kimbro was removed from on top of handsink to allow employees to wash their hands in between changing task, and changing gloves. Corrected On-Site. Repeat Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] Observed rack of raw shelled eggs stored outside of a 2-door cooler at room temperature. 65-70F. PIC had no knowledge of how long eggs had been out of time/temperature control. TCS foods should be cold held at 41F and below to prevent bacterial growth. COS: PIC voluntarily discarded shelled eggs. Corrected On-Site. Repeat Violation. 6-1C Violation of Code: [511-6-1.04(6)(d)] Observed refried beans that had been cooked at 10:00am, covered with aluminum foil and placed in a 2-door cooler to cool. Refried beans reached temperatures ranging from 75-81F and never reached 41F. TCS foods should be cooled within 2hrs from 135F to 70F and within a total of 6hrs from 135F to 41F or less. COS: Refried beans had passed the 6 hour window for cooling and were discarded. Inspector instructed placing refried beans into smaller containers, and also leaving lid partially open to allow cool ambient air to hit warm products during cooling process. Corrected On-Site. New Violation.
