Inpection Notes

Observed chicken date labeled with a 12/22 date label in a conventional refrigerator and salsa in the walk-in cooler with no date label. Today's date is 1/4/19. PIC stated food is date labeled upon being placed in the freezer and the food was taken out of the freezer and placed in the conventional refrigerator cooler 2 days ago on 1/2/19. All TCS foods should be date labeled with a 7 day expiration date with day 1 being the day of preparation and discarded on day 7. COS: Employee was instructed to discard the chicken and salsa and now date label all TCS foods being stored in the walk-in cooler and conventional refrigerator. Corrected On-Site. Repeat Violation.
