Inpection Notes

Observed prep-top cooler containing tomatoes, lettuce, and eggs at 48-52 degrees F. Observed walk-in cooler with an ambient temperature of 50F. All TCS items temped in fridge 50 - 52F. PIC states when they came in a 8AM on 1/4/18 the walk-in refrigerator was at 50F. A repair man had come to work on walk-in 1 hour prior to inspection. COS: PIC voluntarily discarded all TCS foods stored in walk-in cooler. Items discarded included all thawed chicken, cheeses, eggs, milk, cut tomatoes, and cut lettuce. Inspector to follow up on 1/7/19 to make sure cooler is functioning properly or not being used to store TCS foods. PIC was informed and agreed not to use walk-in cooler to store any TCS foods until it is verified it can hold 41F. Corrected On-Site. New Violation. 16B Violation of Code: [511-6-1.06(2)(r)] Observed handwashing sink in main kitchen that does not work. A plumbing system shall be repaired according to law and be maintained in good repair. PIC states a work order is in for the repair of the sink. New Violation. 17C Violation of Code: [511-6-1.07(5)(a),(b)] Observed leaking ceiling where air duct is in main kitchen. Ensure the ceiling is in good repair and not leaking water. Repeat Violation.
