Final rinse temperature must reach at least 180F in order to effectively sanitize food-contact surfaces. COS: 3-compartment sink to be used until dish machine can be adjusted. Corrected On-Site. New Violation. 6-2 Violation of Code: [511-6-1.04(6)(g)] Observed pureed turkey and sliced ham in 2-door standing cooler date-labeled with the use-by date 10 days after preparation date. TCS foods must be date-labeled with a discard date no longer than 7 days after preparation counting as day one. COS: Employee replaced labels with appropriate dates. Corrected On-Site. New Violation.
