Violation of Code: [511-6-1.04(4)(c)1(iv)] Observed corn starch, hoisin sauce, chili, sugar, salt, and oil in food prep areas left uncovered. Packaged and unpackaged foods shall be protected from cross contamination by storing the food in covered containers or wrapped unless food is actively cooling. COS: PIC placed lids on all uncovered items. Corrected On-Site. New Violation. 6-1C Violation of Code: [511-6-1.04(6)(d)] Observed raw chicken at 47F at 1:37PM then at 47F at 2:30PM. Chicken was covered with plastic wrap in a large bowl in the walk in cooler. PIC states chicken was prepared at 1:00PM. Chicken will not reach target temperature of 41F by 5:00PM. Time/Temperature Controlled for Safety Foods must be cooled from 70F within 4 hours. COS: PIC placed chicken in freezer uncovered where it reached a temperature of by Corrected On-Site. New Violation. 17D Light fixture in hood above wok area is missing a protective cover. Ensure light bulbs are shatter resistant or have adequate shielding in areas where they are exposed to food.
