Violation of Code: [511-6-1.04(6)(f)] Observed diced tomatoes at 50F in bowl on top of pans in preptop cooler. Time/temperature Controlled for Safety foods must be cold held at 41F or lower to prevent the growth of harmful bacteria. COS: PIC voluntarily discarded diced tomatoes. PIC was educated on the need to place the tomatoes in a pan inside the preptop cooler, rather than on top. Corrected On-Site. New Violation.
