Violation of Code: [511-6-1.04(6)(f)] Observed garlic in oil at 57 degrees Fahrenheit in a reach in merchandiser cooler. Observed cut lettuce at 49 degrees Fahrenheit. Time/Temperature Controlled for Safety Foods must be cold held at 41 degrees Fahrenheit or lower. COS: PIC voluntarily discarded garlic in oil. PIC stated cut lettuce had been prepared 2 hours prior. PIC placed cut lettuce into walkin cooler to cool. Cut lettuce was observed cooling properly during inspection (see temperature log). Corrected On-Site. New Violation.
10D Violation of Code: [511-6-1.04(4)(d)] Observed cut lettuce, seafood sauce, ginger dressing, and soy sauce stored in unmarked bulk containers. Working containers holding food that are removed from their original containers for use in the food establishment shall be clearly and legibly identified with the common name of the food. COS: PIC labeled containers to identify their contents. Corrected On-Site. New Violation.
