Violation of Code: [511-6-1.04(4)(c)1(iv)] Observed multiple food items stored in the reach-in coolers uncovered. Food must be stored covered in order to prevent overhead contamination. COS: PIC covered items with plastic wrap or lids. Corrected On-Site. New Violation.
4-2B Violation of Code: [511-6-1.05(6)(n)] Chemical sanitizing dish machine sanitizer registering 10ppm chlorine. Chlorine sanitizer must read at least 50ppm in order to effectively food-contact surfaces. COS: Establishment using 3-compartment sink to sanitize dishes. Corrected On-Site. New Violation.
5-2 Violation of Code: [511-6-1-.04(7)(e)] Menu does not have a reminder provider for their food items that may potentially be served undercooked. If animal foods are to be served raw or undercooked, the permit holder shall inform customers of the significantly increased risk of consuming such foods by way of disclosure and reminder. The reminder shall include asterisking the animal-derived foods requiring disclosure. New Violation.
