Violation of Code: [511-6-1.04(4)(c)1(iv)] Observed raw chicken and onion stored in reach-in cooler and merchandiser cooler uncovered. Food must be stored covered to prevent overhead contamination. COS: PIC covered items with lids and plastic wrap. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(6)(n)] Observed dish machine washing dishes without reaching the required 120F for chemical sanitizing dish machine. Chemical sanitizing dish machine must reach at least 120F in order to effectively clean and sanitize food-contact surfaces. COS: PIC allowed dish machine to run multiple times until it was able to reach 132F. Dishwashing employee instructed to allow machine to run until reaching the required temperature before placing dishes in machine for cleaning and sanitizing. Corrected On-Site. New Violation. 17B Violation of Code: [511-6-1.06(5)(k),(l)] Observed hole on the side of the dumpster near the bottom. Dumpster must be maintained in good condition to prevent the harborage of pest and/or leaking of contents. PIC put in work order. New Violation.
