Violation of Code: [511-6-1.04(6)(g)] Observed multiple TCS items prepped days prior to the inspection without the appropriate date mark. TCS foods must be datemarked when stored more than 24 hrs with the date of preparation and/or disposition not exceeding 7 days with the day of preparation counting as day 1. COS: PIC applied the appropriate datemark to the items. Corrected On-Site. New Violation. 14B Violation of Code: [511-6-1.05(10)(e)1,2,4] Observed knives being stored with blades wedged in between the wall and countertop which is not frequently cleaned and sanitized for storage of food-contact surfaces. Equipment and utensils shall be stored in a clean, dry location where they are not exposed to splash, dust, or other contamination. COS: PIC removed knives for cleaning and sanitizing and found an appropriate are for storage. Corrected On-Site. New Violation.
