Ready-to-eat foods prepared in-house must be discarded within 7 days of the original date of preparation. COS- CFSM voluntarily discarded products. Corrected On-Site. New Violation. 12D Violation of Code: [511-6-1.04(4)(g)] Observed raw trout being thawed in prep sink designated only for the preparation of fruits and vegetables or the cooling and thawing of ready to eat foods. COS- Raw trout removed from prep sink and sink cleaned and sanitized. The warewashing sink may be used for the thawing and preparation of raw foods if the sink is cleaned and sanitized prior to use and the food is placed in a clean colander or pan. Corrected On-Site. New Violation.
