Violation of Code: [511-6-1.04(6)(f)] Lobster roll prepared yesterday and placed into sandwich unit recorded at 61F. Time and temperature control for safety foods must be kept at 41F or less. COS: Lobster roll voluntarily discarded. Corrected On-Site. New Violation. 6-1D Violation of Code: [511-6-1.04(6)(i)] No written procedure on file for sushi rice which is kept out at room temperature using TPHC. Time and temperature control foods using TPHC need to be listed on a written policy that details the steps a facility takes to follow the regulations. New Violation. 14A Violation of Code: [511-6-1.04(4)(k)] Observed ceramic mugs stored in bulk food containers. Ceramic can easily chip and fall into foods- scoops must be shatterproof to prevent potential contamination. COS- CFSM removed breakable mugs from foods, to purchase shatterproof scoops. Repeat Violation
