Violation of Code: [511-6-1.04(6)(f)] Observed tubs of marinara sauce with temperatures ranging from 47F to 55F located in back corner of walk-in cooler. Tubs were prepped and made the night before. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41F or below or 135F or above. Tubs of marinara located next to tubs in the corner were all in temp. COS: PIC checked temperatures again and discarded all 4 tubs of marinara located in back corner of cooler. Corrected On-Site. New Violation.
