In order to verify that foods are kept out of the danger zone and that chicken is fully cooked, a thermometer must be available that can record temperatures of 41F-165F. New Violation. 15B Violation of Code: [511-6-1.05(3)(h),(i)] Test strips not provided for quat based sanitizer. Each sanitizer being used must have test strips provided in order to check and monitor concentration. New Violation.
