Violation of Code: [511-6-1.05(7)(b)] Accumulated grime debris and residue in disassembled tea urn nozzle spouts. Clean and sanitize food contact surfaces of tea dispenser nozzles at least every 24 hours. COS- PIC placed nozzles aside out of use to show staff debris and discuss proper cleaning procedures. Corrected On-Site. New Violation. 6-1C Violation of Code: [511-6-1.04(6)(d)] Pans of whole intact pork loin 73-97F and pot roast 106-114F cooling in walk-in cooler with tightly wrapped aluminum foil where product is not cooling rapidly enough to fall from 135F to 41F within 6 hours where the product reaches 70F within 2 hours of the 6 hour cooling timeframe. COS- PIC determined meats were removed from cooking at 3pm (less than 2 hours ago), meats butterflied, propped open, and placed in walk-in freezer uncovered to rapidly chill. Meats cooled 15F first 20 minuets in freezer and projected to meet cooling parameters for food safety. PIC to schedule meeting with staff to discuss cooling methods for different food products, temperature taking practices, and record keeping. Corrected On-Site. New Violation.
