Violation of Code: [511-6-1.04(4)(u)] No sneezesield provided on left serving line (facing line) where pre-portioned food on sheet pan sits for service on serving line. The right serving line has a fabricated shield for this same set-up. Either provide shield or do not put unwrapped food on this part of serving line for service. New Violation. 12A Violation of Code: [511-6-1.04(4)(w)2] Hotel pan of pears under sneezeshield but no utensil for dispensing provided. Students may touch multiple pieces of fruit with bare hands to select a piece of fruit and/or handle multiple ones to examine pieces of fruit before selection. Provide utensil for service or pre-wrap fruit for service. New Violation. Remarks Washing and sanitizing of kitchenware/utensils all done manually (chemical sanitizing) - dishwasher has not been used for 3 yrs. Work order 9/27 for dumpster with damaged lids to be replaced.
