Violation of Code: [511-6-1.05(6)(n)] Chemical sanitizing dish machine not dispensing sanitizer after multiple cycles. upon further inspection, sanitizer bottle empty. Quat spray bottles found to contain less than 100PPM sanitizer. Sanitizers must be maintained according to manufacturer's specifications: 50-100PPM for chlorine and 150-400PPM for quat. COS: Bottle replaced for chlorine sanitizing dish machine, tested at 50PPM. Spray bottle solutions remade to 150PPM Corrected On-Site. New Violation. 6-1C Violation of Code: [511-6-1.04(6)(d)] 3 pans of macaroni and cheese cooling in walk in since 11:30AM found at 66-74F after 2 hours (2:35PM). Time and temperature control for safety foods must be cooled from 135F to 70F within 2 hours and then down to 41F in a total of 6 hours. COS: Macaroni voluntarily discarded. Discussed procedures with PIC on future cooling methods to meet the regulations Corrected On-Site. New Violation. 13A Violation of Code: [511-6-1.02(1)(d)] Most current inspection report (score of 70) not displayed for public view. The most recent inspection must be in public display at all times.
