Violation of Code: [511-6-1.05(7)(b)] Clothes soaked in sanitizer and rung out sitting in container and used for cleaning tables. Clothes disposed after use. No sanitizer detectable on clothes for sanitizing. There are 2 methods for cleaning and sanitizing with clothes that are with regulations. Method 1. 2 Bucket Method - 1 Cloth used to wipe down then another clothes are soaked in sanitizer then used to wipe down food contact surfaces. Method 2. Sanitizer is sprayed on food contact surface and wipe with cloth. COS: Came up with procedure during last lunch period. Corrected On-Site. New Violation. 15A Violation of Code: [511-6-1.05(6)(a)] Freezer has built up ice on drain and both reach through cooler had water leakage. Condensate is considered (Not drinkable water) and should not be allowed to come in contact with food contact surfaces. COS: Pans are being used to watch drip. Order has been put in for repair. Corrected On-Site. New Violation. 15C Violation of Code: [511-6-1.05(7)(d)] Sprayer used to clean tilt skillet with build up of mold inside rim of sprayer. Needs to be cleaned more frequently. New Violation. 17C Violation of Code: [511-6-1.07(5)(a),(b)] Ventilation vents above hot holding units and above food prep sink had accumulation of dust and gunk. Ventilation systems above food contact surfaces need to be cleaned and maintained to prevent possible contamination New Violation. 17C Violation of Code: [511-6-1.07(2)(e)] Floor next to mop sink in chemical storage had build up underneath rubber mats. Flooring needs to be kept clean, store mats off floor so cleaning can be easier in area.
