Violation of Code: [511-6-1.05(6)(m)] Hot water sanitizing dish machine not running within the required 5-30 PSI range. Wash cycle starting at 2-3 PSI and rinse well above 30 PSI. Maintenance will get it fixed and will start monitoring it during routine check ups. Repeat Violation. 11A Violation of Code: [511-6-1.04(6)(e)] Pizza sauce cooling in shared area reach in cooler not experiencing a drop in temperature quick enough using current methods to reach the required 41F within 4 hours of prep. Pizza sauce is kept with tight fitting lid in a large lexan tub. Cooling should be achieved using effective means such as adding ice as an ingredient, using the freezer to assist cooling, prepping smaller quantities of food, or cooling uncovered. COS: PIC educated on cooling methods and marinara sauce moved to freezer to assist in cooling Corrected On-Site. New Violation. 14C Violation of Code: [511-6-1.05(10)(e)1&3] Single service lids for cups stored in boxes stacked on ground next to ice machine. Single service articles must be stored at least 6 inches off the ground to protect from possible contamination. COS: Lids moved to shelving 6 inches off ground Corrected On-Site. New Violation.
