Violation of Code: [511-6-1.04(6)(d)] Two hotel pans of chicken prepared 8/28 and cooling overnight found in walk in cooler at 49-48F. Time and temperature control for safety foods must be cooled from 135F to 70F within 2 hours and down to 41F in a total of 4 hours. COS: Chicken voluntarily discarded Corrected On-Site. New Violation. 6-2 Violation of Code: [511-6-1.04(6)(g)] Chicken tenders and hot dogs in sandwich unit without date label. Cooked shrimp in makeline cooler without date label. All foods had been stored for more than 24 hours. Ready to eat TCS foods if held for over 24 hours must be marked with a 7 day discard label counting the day of prep as day 1. COS: Foods marked with appropriate date label Corrected On-Site. New Violation. 15B Violation of Code: [511-6-1.05(3)(h),(i)] Quaternary ammonium test strips could not be found. Must have a way to check concentration of chemical sanitizers used on site. New Violation.
