Violation of Code: [511-6-1.05(8)(b)] From Base of Operation Inspection: PIC described washing process used when cleaning nozzles, scoops, bottles, and containers used for handing and storing ice and syrups to occur at fiberglass sink where utensils are washed under hot soapy water, rinsed off, then ready for use. The fiberglass sink is designated for as the establishment's service sink and to be used only for the disposal of mop water and liquid waste discharge held in the grey water tanks of the mobile units. This sink is not approved for the use of cleaning utensils. Utensils must be cleaned only in the 3 compartments sinks provided in the mobile units in the order of wash, rinse, and sanitize so that the food-contact surfaces of utensils and equipment receive the necessary chemical sanitizing step as the last part of the cleaning procedure. New Violation. 16C Violation of Code: [511-6-1.06(4)(h),(i)] PIC explained process for discharge of liquids held in grey water tank of mobile unit includes discharging at base of operation parking lot near curbing intended for use of storm water runoff only. Liquid waste generated by the mobile unit must be discharged into an approved sewage system. This mobile unit is permitted to discharge grey water tank liquids through the service sink installed inside the base of operation. New Violation. Remarks Unit #2 at base of operation at time of inspection.
