Violation of Code: [511-6-1.04(6)(e)] Large cambros of leaf lettuce and chopped romaine lettuce with tight fitting lids cooling in walk-in from 76F to 74F and 75 to 71F in 40 minutes respectively. When cooling foods, ensure cooling method used allows for the product to cool within required timeframes. Discussed reducing the temperature of water used to wash and soak produce so that product is 41F or less prior to placing in cooler. COS- CFSM prepared ice baths at vegetable prep sinks and rapidly cooled products to 37F within 3 hours of initial preparation. Corrected On-Site. Repeat Violation.
