Violation of Code: [511-6-1.05(7)(b)] Build up of black mold residue along interior of ice machine. Food contact surfaces must be cleaned at a frequency to prevent the accumulation of molds and debris. COS: PIC cleaned the area with a sanitized rag Corrected On-Site. New Violation. 6-1C Violation of Code: [511-6-1.04(6)(d)] Egg rolls beginning cooling process at start of inspection failed to drop to 70F or below within 2 hours. Time and temperature control for safety foods must be cooled from 135F to 70F within 2 hours, and within a total of 6 hours from start of process down to 41F. COS: Cooling was monitored during inspection and changes were made throughout to expedite cooling. Egg rolls were rearranged to smaller quantities and moved to walk in freezer. Bags of ice also added onto top to assist with cooling. After 2 hours, egg rolls within several degrees of the requirement were deemed safe to keep, and others beyond that were voluntarily discarded Corrected On-Site. New Violation.
