Violation of Code: [511-6-1.04(6)(f)] Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit; various deli meats on the prep-top unit exceeded the required parameters (see temperature observations); consulted with PIC on ensuring all potentially hazardous foods are cold held at the required provisions; consulted with PIC on collaborating with maintenance staff to ensure all cold-holding units are properly calibrated; PIC voluntarily discarded the observed aberrations. Corrected On-Site. New Violation.
