Violation of Code: [511-6-1.05(8)(a)] Racks of dishes, plates, and utensils that were washed and set aside for use not being sanitized. PIC states they ran out of sanitizer and will not get any until tomorrow. Food contact surfaces must be sanitized before use after cleaning. COS: PIC instructed to obtained bleach from chemical supply and create a sanitizer solution at 100 ppm in the 3 compartment sink. All equipment put away after washing sanitized in solution. Corrected On-Site. New Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] All foods stored in sliding door cooler found at above 41 degrees (see log). Time and temperature control for safety foods must be cold held at 41 degrees or below. COS: TCS foods stored for more than 4 hours voluntarily discarded. All other TCS foods moved to 3 door merchandiser for storage. Unit in need of maintenance. Corrected On-Site. New Violation. 6-2 Violation of Code: [511-6-1.04(6)(g)] No date labels on any TCS prepared foods held overnight. All TCS foods prepared in house and held longer than 24 hrs must have a 7 day expiration date with the day of preparation counting as day 1. New Violation. 12A Violation of Code: [511-6-1.04(4)(q)] Metal tray of fish filets thawing in sink labeled for mop sink. Food must be protected from contamination by storage in a clean, dry location that is not exposed to splash, dust, or other contamination. COS: Metal tray removed from mop sink Corrected On-Site. Repeat Violation. 17A Violation of Code: [511-6-1.06(5)(h)] Trash can in female restroom uncovered. All female restrooms must contain covered receptacles for hygiene products. COS: Lid obtained from storage used to cover trash can Corrected On-Site. New Violation. 17B Violation of Code: [511-6-1.06(5)(o),(p)] Trash littered underneath dumpster and around enclosure causing odor and attracting pest. Dumpster areas must be maintained clean. New Violation. 18 Violation of Code: [511-6-1.07(2)(m)] Screen door in kitchen slightly ajar throughout inspection. Door being held closed with fryer equipment that is not in use. Outer openings of a food service establishment must have solid, tight-fitting doors to prevent the entry of insects. New Violation.
