Violation of Code: [511-6-1.05(7)(b)] Interior components of ice machine, behind baffle, contained a buildup of black and pick slime mold. Food contact surfaces must be cleaned at a frequency necessary to preclude the accumulation of mold and debris. COS: CFSM cleaned the contaminated areas with a sanitized rag Corrected On-Site. New Violation. 11D Violation of Code: [511-6-1.05(2)(k)] Food thermometers found in cheese and sausage of makeline cooler both off from the intended temperature. In sausage, food thermometer measuring over 220F, actual temperature at 37F. In cheese, food thermometer measuring 50F when actual temperature is 32F. Food temperature measuring devices must be accurately scaled to within 2 degree Fahrenheit. New Violation. 15B Violation of Code: [511-6-1.05(3)(h),(i)] No testing kit available for chlorine sanitizer used in chemical sanitizing dish machine. Only testing strips found on site, for quaterary ammonium, will not work on chlorine. Every sanitizer used in a food service establishment must have a testing kit to verify concentration of the chemical used. New Violation. 15C Dough proofing equipment with build up of food debris and receipt paper trash inside of units. Non-food contact surfaces must be cleaned a frequency to prevent the build-up of accumulations. Repeat Violation. 17B Violation of Code: [511-6-1.06(5)(n)] Dumpster lid torn off of outside dumpster and propped up on gate inside of enclosure. Outdoor receptacles for waste must be covered with a tight fitting lid New Violation. 17C Violation of Code: [511-6-1.07(5)(a),(b)] Floors under shelving in walk-in cooler with heavy build-up of trash and food debris. Walls behind prep table next to pizza oven, and dishmachine with heavy build-up of grease and food residue. Physical facilities must be cleaned as often as necessary to prevent trash buildup. Repeat Violation. Remarks Discussed need for re-sealing dishmachine inlet and outlet to the wall. Per CFSM, a work order has been placed.
