Inpection Notes

Violation of Code: [511-6-1.04(6)(d)] Pre-cooked wings cooling in 2-door merchandiser in lidded bus tubs for 1-2 days with temperatures above required final cooling and cold holding temperature of 41F or below. Wings cooked 5/16 52F, 53F and wings from 5/18 54F. Cooling must be from 135F to 70F within 2 hours and from 135F to 41 within a total of 6 hours. Wings in 1-door/2drawer unit also cooked several days previous with temperatures 49F - 50F. COS: All wings voluntarily discarded. All the wing containers had heavy condensate build-up on lids indicating wings stayed warm for an extended period of time - initial cooling is an ice bath per CFSM and then wings put into cooler. Discussed cooling below 70 before combining into deep bust tubs and not putting lids of bus tubs completely on until wings reach 41F or below. More monitoring of cooling temperatures needed. Corrected On-Site. New Violation. 15B Violation of Code: [511-6-1.05(3)(h),(i)] No test strips available for sanitizer being used in sanitizer compartment of 3-compartment sink and cloth storage buckets. Using QUAT sanitizer and only chlorine test strips found by CFSM. Need to purchase QUAT test strips. New Violation. 18 Violation of Code: [511-6-1.07(5)(k)] Many flies in Kitchen area. Check fly fan at expo window - may be blowing inward allowing insects to be blown into kitchen. Doors from outside into kitchen opened frequently - limit access if possible to keep doors closed as much as possible. Repeat Violation.
