4-1A Violation of Code: [511-6-1.04(4)(c)] Cooked chicken stored on bottom shelf of walk in cooler, beneath raw beef and eggs. Several sauces stored under raw eggs in bottom portion of makeline cooler. Raw animal foods must be stored so that the highest minimum internal cooking temperature foods are on the bottom and ready to eat foods are above.
COS: Foods were rearranged Corrected On-Site. New Violation.
14A Violation of Code: [511-6-1.04(4)(k)] Handle of scoops used for potato starch and corn starch in contact with the product. Prevent handles from coming into contact with food by storing them above the top of the food.
COS: Scoops were removed from containers to be wash, rinsed, and sanitized Corrected On-Site. New Violation.
Remarks Water temperature in crock used to store utensils- 139F
