Time and temperature control for safety foods must be cold held at 41F or below. COS: BBQ was voluntarily discarded. Maintenance called out to adjust unit. Corrected On-Site. New Violation. 6-1C Violation of Code: [511-6-1.04(6)(d)] Cole slaw bulk container cooling overnight found to be above 41F in the walk in cooler. Time and temperature control for safety foods must cool to 41F or below from room temperatures within 4 hours. Recommend use of smaller quantities and uncovered cooling to meet the requirements COS: Cole slaw voluntarily discarded Corrected On-Site. New Violation. 6-2 Violation of Code: [511-6-1.04(6)(g)] Loaded baked potatoes, bbq, and cole slaw that will be kept for over 24 hours in the walk in cooler without a date label. Time and temperature control for safety foods must be date labeled if not served out within 24 hours with a discard date of 7 days counting the day of prep as day 1.
