2-2D Violation of Code: [511-6-1.07(3)(b)] No paper towels available at handsink in grill prep. Each handsink must provide individuals a way to dry their hands. COS: CFSM supplied handsink with new roll of paper towels Corrected On-Site. New Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] Wall facing sandwich unit in front food service area holding packages of hot dogs and cheese at above 41F (see log). Time and temperature control for safety foods must be cold held at 41F or below. COS: Foods were voluntarily discarded. Sandwich unit adjusted to a colder setting. CFSM instructed to monitor unit over the next several hours for temperatures of 41F or below before storing TCS foods in unit. Corrected On-Site. New Violation. 12C Violation of Code: [511-6-1.04(4)(m)] Wet wiping cloths stored on milkshake table, prep table, & next to grill. Wiping cloths used to wipe down food-contact surfaces must be placed in sanitizer between uses. COS: CFSM placed wiping cloths in sanitizer solution. Corrected On-Site. New Violation. 15B Violation of Code: [511-6-1.05(3)(h),(i)] No test kit available for chlorine sanitizing solution. Only test strips available are for quaternary ammonium. A test kit must be provided to accurately measure the concentration of sanitizing solutions used in the establishment. New Violation.
