6-1A Violation of Code: [511-6-1.04(6)(f)] TCS food items in front prep top cooler (back row), middle prep top cooler (top), small prep top cooler (drawers) and countertop butter storage with a temperature reading of above the required 41F (see log). Time and temperature control for safety foods must be cold held at 41F or below to prevent microbial growth. COS: All foods out of range overnight were voluntarily discarded (pasta, spaghetti, sausage, white sauce), the remaining foods out of range for several hours (<3) were moved to the freezer to cool Corrected On-Site. New Violation. 6-1C Violation of Code: [511-6-1.04(6)(d)] Lexan container of chicken cooked this morning and cooling since 11:30 AM failed to reach the required temperature of 70F by 1:30 PM (see log). TCS foods must be cooled with 2 hours from 135F to 70F and within 6 hours total to 41F. COS: Chicken voluntarily discarded. Discussed the need for better temperature monitoring and techniques to help (shallow pans, thinner portions). Establishment plans to use a blast chiller from here on to help with cooling. Blast chiller recently purchased and not hooked up for inspection. Corrected On-Site. New Violation. 10D Violation of Code: [511-6-1.04(4)(d)] Labels no longer legible or not present on bulk storage bins of flour, salt, and powdered sugar. Containers holding food that cannot be readily and unmistakably recognizable need to be legibly labeled with the common name of the food. COS: Bulk containers were labeled by the PIC Corrected On-Site. New Violation.
