4-2B Violation of Code: [511-6-1.05(6)(n)] No sanitizer registering on chlorine test strips in 5 gallon buckets found under handsink, and and in dishpit. Chlorine sanitizer buckets must be maintained at a concentration between 25-100mg/L depending on temperature and pH in order to effectively sanitize. COS: New sanitizer solution was made with new chemical additives to achieve a concentration of 50 mg/L. Corrected On-Site. New Violation. 12B Violation of Code: [511-6-1.03(5)(i)] Employee working the grill not wearing a hair restraint. All food handlers must use an effective, disposable, or easily cleanable net or other hair restraint approved by the Health Authority (i.e. hat, visor) COS: Employee donned a hat Corrected On-Site. New Violation. 15B Violation of Code: [511-6-1.05(6)(j)] Dual purpose warewashing machine currently using hot water as a means of sanitizing, per PIC, registering at 97F on the max temperature recording thermometer. For a single tank, conveyor, dual temperature machine the required temperature may not be less than 160F. Establishment instructed not to use machine to wash dishes until problem is fixed. In the meantime the 3 compartment sink will be set up for use for manual warewashing New Violation.
