4-2A Violation of Code: [511-6-1.04(4)(c)1(iv)] Bottom of tea pitcher in contact with ice from ice machine. Foods must be arranged in equipment so that cross contamination of one type with another is prevented. COS: Pitcher was removed from ice machine and stored on countertop. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(6)(n)] Sanitizing bucket in front service area not registering any chemical sanitizer on chlorine test strips. Sanitizer buckets must be changed often enough to have a chemical concentration that meets the regulations (50-100 mg/L for chlorine) COS: Bucket was remade to a concentration of 100 mg/L. Corrected On-Site. New Violation. 5-1B Violation of Code: [511-6-1.04(5)(h)] Hot dogs stored in crock pot on shelving next to grill not reaching hot holding temperature of 135F for commercially packaged foods within the required 2 hours (see log). All time and temperature control for safety foods that are opened from a commercial package must be reheated to a temperature of 135F or above within a total of 2 hours from removal of cold storage. COS: Hot dogs voluntarily discarded Corrected On-Site. New Violation. 6-2 Violation of Code: [511-6-1.04(6)(g)] Foods prepped in house all incorrectly marked with a discard date of 8 days after preparation. (Chili prepped 4/10 with disposition of 4/14, ham 4/7-4/14, Turkey 4/8-4/15, BBQ 4/10-4/17, and cole slaw 4/12-4/19.) All time and temperature control foods prepped in house or opened from commercial package must have a date label bearing a discard date of 7 days maximum- counting the day of prep as day 1. COS: All foods listed were relabeled with the correct discard date. Corrected On-Site. New Violation. 14A Violation of Code: [511-6-1.04(4)(k)] Handle of fry scoop stored in contact with french fries. Must store utensils with their handles above the top of the food and the container.
