6-2 Violation of Code: [511-6-1.04(6)(g)] Bulk containers of sauces in walk-in cooler and thawed cooked beef intestines in makeline cooler have no date labels. Foods kept more than 24 hours must be date labeled and discarded after a maximum of 7 days. Recommend labeling intestines with day of cooking and freezing and again with date that product is pulled to thaw- product would need to be discarded after 6 days from pulling to thaw since 1st day was used for cooking and freezing in allowed 7 day storing timeframe. COS- cook able to determine original prep dates and back-labeled foods accordingly. Corrected On-Site. New Violation. 15A Violation of Code: [511-6-1.05(6)(a)] Tall reach-in cooler is dripping non-potable water from interior ceiling and splashing on storage shelves and food containers. Makeline cooler has non-potable water/condensate pooling along bottom of unit. Have units serviced and ensure water/condensation no longer drips or pools in units to keep foods and food contact surfaces protected from potential cross-contamination. New Violation. Remarks: Discussed storage of chemicals and concentration of sanitizers used in sink and wiping buckets. Recommend improving staging area space for dirty utensils- the first compartment of 3 compartment sink is dedicated for washing utensils, if the drainboard and first compartment is filled with dirty utensils then the 3 compartment sink cannot be properly setup to wash, rinse, and sanitize. Discussed areas appropriate for employees to store their personal belongings (i.e jackets, phones). A reinspection is required with 10 days.
