4-1A Violation of Code: [511-6-1.04(4)(c)] Observed pieces of raw chicken and breading along top and sidewalls of meat preparation sink and drainboard while queso dip being cooled in icebath in adjacent vegetable/ready-to-eat food preparation sink. Food must be protected from cross-contamination by separating raw animal food from ready-to-eat foods during storage, preparation, and display by using separate equipment for each type and/or preparing each type of food at different times or in separate areas. COS- queso removed from prep sink, double sink drainboard area clean and sanitized, and fresh icebath prepared before queso returned to finish cooling. The current location/arrangement of preparation sinks does not allow for raw animal foods and ready-to-eat foods to be prepared at the same and the area must be cleaned and sanitized after raw foods are prepared before ready-to-eat foods are prepared. Discussed with CFSM the option to use third compartment at 3 compartment sink for preparing raw animal foods. Should the kitchen be renovated or the violation persist, relocation of raw and/or ready-to-eat prep sinks will be required. Corrected On-Site. New Violation. Remarks: Wash 160, Rinse 187, Surface 172F Quat Sink 400ppm Quat Buckets 300-400ppm General Manager contacting supplier for spill kit labeled to kill Norovirus. Copy of key drop delivery attached. If establishment desires to remodel kitchen, contact City of Oakwood for renovation permit(s). A plan review through the Health Authority will be included as part of this process. Contact Hall Co.
