6-1A The following TCS items were held above the minimum cold holding requirement in the top portion of the salad prep cooler: cut melon, cheese, salad and sprouts. Cold held TCS foods must be held at 41 degrees Fahrenheit or below to inhibit bacterial growth. COS- items had been out less than 2 hours and were placed on an ice bath. Corrected On-Site. New Violation.
