6-1C Violation of Code: [511-6-1.04(6)(d)] The following items cooled overnight in the WI and RI cooler: 2 pans of rice (45-52 degrees Fahrenheit), 3 pans of cooked chicken (48-49 degrees Fahrenheit). TCS foods must cool from 135 to 70 degrees Fahrenheit within two hours and from 70 to 41 within the next four hours (total 6 hour process). Per PIC, rice and chicken cooked at night is typically placed on baking pans and cooled in the WI cooler. Discussed record keeping/monitoring the cooling process to ensure all TCS foods meet minimum cooling requirements. COS- All aforementioned products were discarded. Corrected On-Site. New Violation. 18 Violation of Code: [511-6-1.07(2)(m)] Air gaps at back screen door. Replace door sweep and seal all necesarry areas to prevent the entry of pests and rodents. New Violation.
