2-2B Violation of Code: [511-6-1.03(5)(j)1&2] Coffee travel mug on shelf above prep area. Policy for drink in kitchen has been allowing food handlers/kitchen staff to bring their own travel mugs with lids for drinks in the kitchen. Drinks can be allowed in the kitchen if they are in a single-service (disposable) cup with a secure lid and straw and stored to prevent any possible contamination of food/food contact surfaces. COS: Travel mug taken out of the kitchen and new procedure with disposable cups, lids and straws enacted for drinks in kitchen by PIC. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(7)(b)] Ice machine baffle with large build-up of pink mold. To control the growth of mold inside ice machine completely empty machine frequently for thorough cleaning and sanitizing and between complete cleanings, wipe baffle with sanitized cloth. New Violation. 4-2B Violation of Code: [511-6-1.05(6)(n)] 3-compartment sink set-up with manual dishwashing taking place and sanitizer compartment with 56F water and undissolved Quat sanitizer tablets in the bottom of the compartment and no measurable sanitizer detected with test strip. Quaternary ammonium compound solution shall have a minimum temperature of 75F. This allows the tablets to dissolve and mix with the water for proper sanitizing. COS: Cold water was emptied out and tempered water 95 refilled and concentration of 2000ppm (per manufacturer) verified. Corrected On-Site. New Violation. 8-2B Violation of Code: [511-6-1.07(6)(b)] Many generic spray bottles filled with chemicals on shelf below dirty dish table in dishwashing area without labels. Working containers used to store poisonous or toxic materials such as cleaners taken from bulk supplies shall be clearly identified with the common name of the material. COS: PIC put white labels with name of chemical on the label on each bottle. Corrected On-Site. New Violation. 15B Violation of Code: [511-6-1.05(3)(h),(i)] No quaternary ammonium (QUAT)test strips not available to monitor the strength of Quat sanitizer being used in the 3-compartment sink for sanitizing kitchenware/utensils/equipment manually. New Violation. 17C Violation of Code: [511-6-1.07(5)(a),(b)] Floors throughout need a better cleaning under equipment at floor/wall juncture - accumulation of food prep debris/dust/dirt that can be attraction for insects/rodents. Move all storage - HVAC filters, equipment from under equipment to allow for easier cleaning under equipment. New Violation. Remarks: Hot water sanitizing dishmachine final rinse temperature max temp thermometer 163F.
