2-2B Violation of Code: [511-6-1.03(5)(j)1&2] Observed PIC eating plate of food set on prep table at cookline. Open employee beverage cups sitting out on counter tops in food service areas. Employees must consume food in designated break areas separate from food preparation areas. Employee drinks must be in a single service cup with a tight fitting lid and straw. COS- PIC moved food to dinning area and employee cups removed from food service areas or covered with lid and straw. Corrected On-Site. New Violation. 4-1A Violation of Code: [511-6-1.04(4)(c)] Container of egg yolk stored beside box of cabbage in small walk-in cooler. Shell eggs stored above dressings and sandwich toppings in makeline cooler. Raw chicken and raw beef stored above and beside milk and turnip greens, crowder peas, and northern beans stored beside cuts or raw meat in walk-in cooler. Keep ready to eat foods stored separate and above raw animal foods. Raw animal foods must be stored below ready to eat food in descending order of lowest (145F) to highest (165F) required internal cook temperature. COS- PIC voluntarily discarded cooked chicken and rearranged items accordingly. Corrected On-Site. Repeat Violation. 6-1C Violation of Code: [511-6-1.04(6)(d)] Foods pulled off of steamtable and placed in walk-in cooler not cooling rapidly. When cooling foods, foods must fall from 135F to 41F within 6 hours where cooling is rapid enough for foods to reach 70F within the first 2 hours of the 6 hour cooling timeframe. COS- PIC voluntarily discarded foods. Discussed with PIC how plastic containers with tight fitting snap-on or screw-on lids inhibits the cooling of hot foods- recommend trying uncovered shallow pans or containers during the cooling process as an alternative. Corrected On-Site. New Violation. 13A Violation of Code: [511-6-1.02(1)(d)] Inspection posted in drive-thru window is 96 from 3/5/15. Inspection posted in dining room is 90 from 10/28/15. The most recent inspection is 87 from 5/2/16. Inspection posted for customer view must be the most recent inspection. PIC to post today's inspection for customer view in dining and drive-thru. New Violation.
