4-2B Violation of Code: [511-6-1.05(6)(n)] Buckets throughout kitchen used to store sanitizer rags testing with no chemical sanitizer. Make sure sanitizer solutions are testing for effective amounts of sanitizer to properly wash, rinse, and sanitize food contact surfaces. COS: Buckets remade with appropriate amount of bleach and testing between 50-100ppm. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(7)(b)] Plastic containers and metal hotel pans used to store dry ingredients with heavy build-up of encrusted grease. Food contact surfaces shall be cleaned at a frequency to prevent the build-up of accumulations. Repeat Violation.
