4-2B Violation of Code: [511-6-1.05(6)(n)] QUAT sanitizer in 3-compartment sink and in buckets throughout kitchen testing with little/no sanitizer concentration. Make sure to change out sanitizer frequently and check water temperature for maximum effectiveness of sanitizer. COS: Buckets and 3-compartment sink made with proper sanitizer concentrations. Corrected On-Site. New Violation.
15C Violation of Code: [511-6-1.05(7)(d)] Observed build-up of grease on shelving, insides of equipment, utensils, around breading stations and handles of equipment (especially oven). Clean non-food contact surfaces at a frequency to prevent the build-up of grease and food residue. Repeat Violation.
