Violation of Code: [511-6-1.04(4)(c)1(iv)] Sheet pans of cookies stored in walk in freezer with no protective covering. Pans of cookies should be covered to prevent from cross contamination during storage. COS: Cookies voluntarily discarded by manager. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(6)(n)] QUAT sanitizer in 3-compartment sink and in buckets throughout kitchen testing with little/no sanitizer concentration. Make sure to change out sanitizer frequently and check water temperature for maximum effectiveness of sanitizer. COS: Buckets and 3-compartment sink made with proper sanitizer concentrations. Corrected On-Site. New Violation. 15C Violation of Code: [511-6-1.05(7)(d)] Observed build-up of grease on shelving, insides of equipment, utensils, around breading stations and handles of equipment (especially oven). Clean non-food contact surfaces at a frequency to prevent the build-up of grease and food residue. Repeat Violation. 17B Violation of Code: [511-6-1.06(5)(n)] Cardboard dumpster with lids open. Keep receptacles covered to prevent the attraction of pests. New Violation. 17C Violation of Code: [511-6-1.07(5)(a),(b)] Heavy build-up of grease and food residue on floors throughout kitchen. Clean physical facilities at a frequency to keep them clean. Repeat Violation.
