Remarks: Hot water sanitizing dishmachine final rinse- temp on max thermometer 167F
Remarks: Bulk of food preparation for the Bakery has now been done in the Bistro Kitchen. The "Teaching Kitchen" attached to this permit is only used for overflow prep if there is a large catering event, etc. If teaching kitchen used, recheck equipment to be used for cleanliness before use. Simply due to the primary use of this kitchen being classwork for teaching purposes.
TPHC no longer in use for display case since unit keeps proper cold holding temps and procedure is now to cool calzone before storing in display case
