2-2B Violation of Code: [511-6-1.04(4)(b)] Kitchen staff member tasting cooked hamburger from hotel pan at ROP station by pinching some out of container with bare hand. Food items can be tasted by using a spoon to scoop some out and taste off spoon or put in a bowl.
COS: Hotel pan of cooked hamburger voluntarily discarded. Corrected On-Site. New Violation.
4-2B Violation of Code: [511-6-1.05(6)(m)] Hot water sanitizing dishmachine final rinse pressure above the 30 psi (38-40psi). Hot water sanitizing dishmachine final rinse pressure shall be within the range specified by the manufacturers data plate and may not be less than 5 or more than 30 psi. Data plate reads 15- 25 psi for final rinse.
Dishwasher company contacted to check. 3-compartment sink set-up for manual warewashing. New Violation.
4-2B Violation of Code: [511-6-1.05(7)(b)] Ice machine with build-up of mold around chute inside the machine. Clean frequently enough to prevent the build-up of mold inside ice machine. New Violation.
Remarks: Hot water sanitizing rinse machine final temperature 189 F on max temp thermometer (160 F requirement for hot water dish machine)
